Wild Turkey Sausage Pizza Recipe

Whether it’s a long morning in the blind or a full day putting in miles, wild game has a way of making every bite feel like it matters. This Wild Turkey Sausage Pizza is a fresh take on that reward—bringing bold flavor, a little heat, and a whole lot of satisfaction to the table.

It’s the kind of meal that works just as well back at camp as it does in your own backyard. Simple ingredients, big flavor, and a recipe that lets wild turkey shine.

Wild Turkey Green Chorizo

Make ahead. Use often.

This is where it all starts. A well-seasoned wild turkey chorizo brings depth, heat, and versatility—perfect for pizzas, tacos, or breakfast at camp.

Ingredients

  • 5 lbs wild turkey meat, cubed

  • 1½ oz salt

  • 2 tbsp jalapeño powder

  • 2 tbsp green hatch chile powder

  • 1 tbsp fresh garlic, grated

  • 1 tsp black pepper

  • 2 tsp dried oregano

  • ¼ cup cilantro, chopped

  • 1½ tbsp chipotle pepper liquid (from adobo)

  • 1 tsp garlic powder

  • 1 tsp ground cumin

  • 3 tbsp tequila

  • 3 tbsp white wine vinegar

  • 6 tbsp water

How to Make It

1. Build the base
Combine the turkey with all ingredients except the tequila, vinegar, and water. Mix thoroughly and let it marinate for at least 1 hour—overnight if you can.

2. Grind
Grind the mixture using a 3/16” plate.

3. Bring it together
Add tequila, vinegar, and water. Mix vigorously for 3–5 minutes until the texture becomes slightly sticky and tacky.

4. Taste and adjust
Cook a small test portion in a pan, taste, and adjust seasoning as needed.

5. Store or use
Use immediately, or store in the fridge for up to 1 week. Can also be frozen, formed into patties, or stuffed into casings.

Turkey Sausage Pizza

Serves 2–3


Ingredients

  • 1 pizza dough (225–250g)

  • ½ cup pizza sauce

  • ¾ cup shredded mozzarella

  • ¼ cup grated parmesan

  • ¼ cup jalapeños, thinly sliced

  • ¼ cup black beans

  • ½ cup wild turkey green chorizo (cooked and crumbled)

  • 3 tbsp cilantro, chopped

Build the Pizza

1. Preheat
If using a pizza oven, preheat to 650°F. For a conventional oven, set to 500–550°F and place a pizza stone on the lowest rack.

2. Shape the dough
On a well-floured pizza peel, hand-stretch the dough into a 10-inch circle. Keep the edges slightly thicker for a good crust.

3. Add the base
Spread the sauce evenly, leaving space around the edge.

4. Layer it up
Add mozzarella, then top with cooked chorizo, black beans, and jalapeños.

5. Finish
Sprinkle parmesan over the top and slide the pizza onto the stone. Make sure the dough moves freely before launching.

6. Cook

  • Pizza oven: 3–5 minutes

  • Conventional oven: 6–9 minutes

Cook until the crust is golden with light char and the cheese is bubbling.

7. Slice and serve
 Let cool for 2–3 minutes, slice into 6 pieces, and top with fresh cilantro.
